Are Maxima/Minima problems in the HSC?
I've never had confirmation for this. Looking at some past HSC papers (extension), it doesn't seem so.
This is just of curiousity btw because I quite like doing them ('cause others seem to struggle )

Maxima and Minima is definitely in the HSC.
The reason you may not see it in the Extension paper is that it is a 2 unit topic. If you look at the 2 unit HSC's you will find them regularly appearing.

Why do they call it 'maxima' and 'minima' in calculus. Wouldn't just 'maximum' and 'minimum' suffice?

Because maximum problems sounds like you're doing some kind of insanely hard question (like the millenium problems).
But really, iunno.

and maxima, minima just changes it to feminine gender in latin - whereas -um is neuter
