For Ancient history, can we elect to do different ares of study rather than the ones listed in the booklet? It just seems to me that the ancient history course is focused on the romans and greeks a lot, when there may be many other choices that we could choose to do.

Yes, you will study the ones in the booklet. The teacher has decided to do those topics, but other schools will do different ones.
